Ingredients
- 1 1/2 cups red lentils
- 4 large carrots, peeled and chopped
- 1 red bell pepper chopped
- 2 celery stalks, chopped
- 1/2 bunch kale (about 4 leaves), stems removed and chopped
- 1 jalapeno, chopped (optional)
- 2 cloves garlic pressed
- 1/2 onion, chopped
- 1 teapoon salt
- 1 teaspoon parsley
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon garlic salt
- 1/2 teaspoon cayenne pepper (add more or less to desired heat)
- 1 inch fresh ginger, minced or grated
- 6 1/2 cups low sodium vegetable stock OR water
Instructions
- Place all ingredients in a slow cooker and pour in vegetable stock.
- Cook on high for 5 hours, or low for 8 hours (low is preferred). Stir a few times throughout the cooking. If you like a more brothy soup, add in 1-2 cups additional stock
- Serve with a dollop of Greek yogurt on the side (optional)

Ingredients
- 2 cups lentils
- 4 cups water for soaking lentils
- 4 cups low-sodium vegetable broth or use water instead
- 1 onion, diced
- 3 stalks celery sliced
- 2 carrots chopped
- 2 cloves garlic minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon oregano
Instructions
- Pre-soak the lentils in water for at least 2 hours, preferably overnight. Drain, discarding soak water.

It was delicious and easily cooked in the crockpot! I topped with chipolte red pepper flakes at serving time and had a piece of cod that was covered in a mixture of spices with it.
