Slow Cooker Summer Veggies

Ingredients
  

  • 2 cups okra, sliced
  • 1 cup grape tomatoes
  • 1 1/2 cups red onion, chunks
  • 2 cups yellow bell pepper, sliced
  • 2 1/2 cups zucchini. sliced
  • 1 cup mushrooms, sliced
  • 1/2 cups balsamic vinegar
  • 1/2 cup olive oil
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions
 

  • Combine veggies in a large bowl.
  • In another bowl, combine balsamic and olive oil.
  • Stir in basil and thyme.
  • Place veggies in a slow cooker, top with marinade, stirring to coat completely.
  • Cook on high 3 hours, stirring every hour.
